Changing courses in the UK

I’m currently a US student looking to study History of Art or Sociology at university in the UK, and I’m wondering how flexible UK universities are with changing your degree. Would it be better if I studied a combined honours degree instead? Any advice/suggestions/experience about this situation or about studying History of Art or Sociology would be greatly appreciated!

Those are two very different courses, it is up to you what you apply for. You need to be very detailed in your application and need to show that you are sure about what courses you are applying to. I believe you can switch courses within the first month but can't beyond that and it needs to be in the same subject area.
