I recently passed my driving test and have arranged to buy a car on this coming friday, or monday dependant on the MOT.
Would I be able to insure the car now and set the cover to begin on friday despite not having the log book yet, even if i do not receive the car until monday?
Or am I unable to insure the car until i officially own it?

Yes, you can insure it now, and set the insurance to start on the day that you pick it up.
