My fave meals to meal prep and freeze are:
- Chilli con carne/ 5 bean chilli
- Bolognese (without the pasta, so I just defrost the bolognese and cook some fresh pasta when I want it)
- Shepherds pie
- Curry
I'm vegan so I use vegan mince/meat alternatives or beans/lentils in all of these and they defrost really well and taste just as good!
